I am interested in taking a one week hike on the AP and would like some suggestions on where to begin and end. I'm looking for a scenic hike, somewhat remote if possible, and moderate to challenging. I would most likely hike in May or June.

I have done two smaller AT hikes in Shenandoah NP that might add up to what you're looking for. If you start at the North end of the park and go South thru Panorama all the way to Swift Run Gap, it makes for a nice 6 days of walking (they are each about 10-mile days). You can always start a little bit inside the park to make it a bit shorter. I did both segments in March so it was nice & cool (no bugs). Still some people around to make for good conversation and company at night at the huts, but not too crowded. Nice solitude during the day. There is a very good shuttle service that operates in and around the park (I used them both times I went). You do parallel Skyline Drive, but its not too obtrusive. There were many periods where I was substantially far from the road for exetended periods- crossings were not too frequent, but you're always close enough in case you need some help. Let me know if you need additional detail & good luck on your hike!! Also, let me know what section you decide to hike. I'm looking towards me next section hike.
